- While pasta cooks, prepare all vegetables: halve cherry tomatoes, dice cucumber and bell pepper, slice or dice red onion, slice olives, and quarter artichoke hearts.
- In a large bowl, combine cooled pasta with prepared vegetables. Add protein if using and gently toss.
- In a separate bowl, whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, garlic, oregano, basil, and red pepper flakes. Season with salt and pepper.
- Pour dressing over pasta mixture. Add mozzarella balls and Parmesan cheese. Gently toss to coat.
- Cover and refrigerate for at least 2–4 hours or overnight to let flavors meld.
- Before serving, toss again. If dry, add more olive oil or vinegar to refresh. Adjust seasoning and serve chilled.
